Grouper and New Potatoes with Dill Sauce

Serve with steamed broccoli and a tomato-sweet onion salad.
Diet Types: Dairy Free, Low Carbohydrate, Low Fat
Ingredients:
  • 1/4 cup Soy Mayonnaise
  • 1/2 cup plain soy yogurt
  • 2 tablespoons Balsamic Vinegar
  • 1 tablespoon Dijon-style mustard
  • 1/2 cup chopped fresh dill
  • 1 pound new potatoes, halved
  • 4 4oz. grouper fillets
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons lime juice
  • Serves: 4
    Cooking Time: 30 minutes - one hour
    Instructions:
    In a bowl, combine mayonnaise, yogurt, vinegar, mustard, and dill; stir to combine. Cover and refrigerate at least 1 hour for flavors to mellow. In a large saucepan of boiling water, cook potatoes until tender, 15 minutes. Preheat broiler. Sprinkle steaks with salt and pepper, brush with lime juice. Broil 4-5 inches from heat 3-4 minutes on each side. Place on individual serving plates with potatoes on the side. Spoon on dill sauce and serve.
